Vegan Mango Coconut Ice Cream
Ingredients:
- 2 ripe mangoes, peeled and diced 
- 1 can of full-fat coconut milk 
- 1/4 cup of agave syrup or maple syrup 
- 1 tsp of vanilla extract 
- A pinch of salt 
Instructions:
- Blend the mangoes until smooth. 
- In a large bowl, mix the mango puree, coconut milk, agave syrup, vanilla extract, and salt. 
- Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. 
- Transfer the ice cream to a container and freeze for at least 2 hours or until firm.
